Appearance: Like oversized scallions

Availability: December through March

Look for: Firm, taut layers, and a white base that is at least 3 inches long

How to Prepare: The entire leek is edible, although most only eat the stalk. Rinse thoroughly and cut off the root and leaves. Slice in half lengthwise and cut into thin slices.  

How to Store: Store in a plastic bag or container in the refrigerator for up to 2 weeks.  

Fun Fact: Leeks belong to the onion family and have a milder taste than a scallion.  

Nutrition Fact: Leeks contain folic acid, which helps our bodies make new cells.
